Simple Lemon Kale Salad with Parmesan

This is the only kale salad recipe you will ever need. I can say that confidently since I’ve brought this basic recipe to five different restaurant menus and multiple cooking parties and it’s always been a hit, ESPECIALLY with folks who tell me they never liked kale before this recipe. It’s a little bit magical is all I’m saying. Make sure you wash your hands extra well before preparing this, because the best way to ensure a delicious salad is to give that kale a massage.

INGREDIENTS

  • 1 bunch kale, washed (I like curly kale for this, but any green variety will do)

  • 1 lemon

  • 2-4 tablespoons extra virgin olive oil

  • salt to taste

  • optional additions: grated parmesan (or any hard cheese), fresh avocado, toasted walnuts

METHOD

  1. Remove the large ribs from the kale and cut into ½” - ¼” strips, then place in a large bowl.

  1. Juice the lemon and directly over the greens. Pour the olive oil over and season with salt. Massage the dressing into the kale until it’s dark green and slightly softened. Taste for seasoning, then serve. Salad will last up to 3 days after being dressed.
