Pepita Guacamole

Simple is best for this classic guac.

INGREDIENTS

  • 1 medium-sized, ripe avocado

  • 1 tablespoon minced shallot or onion

  • juice of 1/2 lime

  • 1/4 teaspoon salt

  • 1 tablespoon minced cilantro

  • 1/4 cup roasted, salted pepitas

METHOD

  1. Pit, peel and mash avocado. Stir in shallot, lime juice, salt and cilantro. Top with toasted pepitas, and serve with fresh veggies or chips.
