Lemon Dijon Vinaigrette

This vinaigrette is the like friendliest kid on the playground - it happily plays with just about anybody. It can also take on other ingredients, like oregano and red wine vinegar for a Greek-style dressing, or extra mustard and home to become honey mustard. Keep a jar of this around - your salads will thank you!

INGREDIENTS

  • 2-3 tablespoons fresh lemon juice (1 large lemon should do it)

  • 1 medium clove garlic, peeled

  • 1 teaspoon dijon mustard

  • 1/2 teaspoon salt (plus additional to taste)

  • 1 cup neutral flavored oil (like avocado oil)

METHOD

  1. Blend together all ingredients except oil until smooth using a blender or immersion blender. (You can also whisk all ingredients together instead, just mince or microplane the garlic first.)

  2. Season to taste with salt and pepper. Use immediately, or hold refrigerated for up to a week. Separation is normal, just shake the dressing to re-emulsify.
