Garlicky Bok Choy

A little fish sauce and white pepper takes this bok choy on a trip to Thailand.

INGREDIENTS

  • 1 pound baby bok choy, washed and spun dry

  • 2 cloves garlic

  • 2 tablespoons avocado oil (or unflavored cooking oil)

  • 1 tablespoon Tamari soy sauce

  • 1 tablespoon fish sauce

  • 1/4 teaspoon ground white pepper

METHOD

  1. Trim off the bottom of each bok choy so that the bulbs are separated into leaves.

  2. Peel and chop garlic.

  3. In a pan large enough to hold the bok choy, add oil and heat to medium high. Add garlic and cook for 15-30 seconds, just until fragrant, then add bok choy and toss to coat in oil.

  4. Add the soy sauce, fish sauce and white pepper and stir to combine. Turn heat to medium and add lid for 1 minute, to steam the bok choy through. Remove lid and continue cooking until sauce is slighty reduced and bok choy is tender.
